Beef tongue is a fatty cut of offal that appears in many global dishes: tongue toast is popular in North America; in Belgium and France, they enjoy boiled beef tongue with mushrooms in Madeira sauce; it also pops up in dishes from Japan to Russia to Brazil. The trick to bringing out tongue's tenderness and unique flavor is to cook it very slowly over several hours.
