Charcuterie Pepper Crusted Bresaola

The Pepper Crusted Bresaola is made of a whole muscle of beef, carefully cured in a mixture of salt and sugar. Then heavily seasoned with cracked black pepper to give it it's beautiful and delicious pepper crust. We then hang it to dry until it reaches its ideal texture.
