Charcuterie Roman-Style Cured Beef Kosher for Passover

The Roman-Style Cured Beef is first cured in a wine-based* brine with an array of different spices and herbs for a specific amount of time.  Once the curing time is complete, we hang it to dry to achieve its ideal texture and flavor.
