ROASTED BEEF WITH POTATOES
Ingredients:
* 4 small onions, quartered
* 1 tablespoon olive oil
* Kosher salt and black pepper.
* 4 LBS Roast beef
INSTRUCTIONS
* Heat oven to 375 F. In a roasting pan, toss the onion, oil, 1/2 teaspoon salt and 1/2 teaspoon pepper.
Push the onion to the edge of the pan.
Season the beef with 1 teaspoon each salt an pepper and place in the center of the pan.
* Roast the beef to the desired doneness, 65 to 80 minutes for medium-rare (remove from oven when the internal temperatures registers 125 F)
* Transfer the beef to a cuttig board, tent loosely with foil, and let rest for at least 15 minutes. Slice and serve with the onions and roasted potatoes.
