Zucchini Mehshi
-1 lbs lean ground beef
-1/6 cup medium grain rice (sushi rice works)
-6-8 zucchini cleaned and cored
-1 can tomato paste
-1 tbsp baharat or all spice
-dried apricots
-1 cup sugar
-pinch of salt
-juice from one lemon
-1 cup of water
- In a large pan put the sugar and make a caramel in low heat. Let it cool.
- Mix the meat, the rice, 2 tbs of baharat, 1 tbs tomato paste, and the salt, mix very well with the hands.
- Stuff the zucchini with the meat (not very loaded) and place them over the caramel. -make a sauce with the tomato paste and the water, and poured over the zucchini, decorate with dry apricots and add some more baharat.
- Finally Add the lemon juice. Cover and cook in low heat for 30 min. Serve with rice and enjoy
