🥩 Ingredients:
• 2 tablespoons sunflower oil
• 2 medium onions, finely chopped
• 2 teaspoons Hungarian sweet paprika
• 1.5 lbs (700g) stew meat, cut into 1-inch cubes
• 2 cloves garlic, minced
• 1 teaspoon caraway seeds (lightly crushed)
• 1 medium tomato, chopped
• 1 green bell pepper, chopped
• 2 medium carrots, sliced
• 1 medium parsnip, sliced (optional)
• 2 medium potatoes, peeled and cubed
• 6 cups beef broth or water
• Salt and freshly ground black pepper to taste
🔪 Instructions:
1. Sauté the onions
In a large heavy pot, heat oil over medium heat. Add onions and cook slowly until golden and soft, about 10 minutes.
2. Add paprika and beef
Remove the pot from heat briefly, stir in the paprika (to prevent burning), then add beef. Return to heat and brown the meat lightly on all sides.
3. Flavor base
Add garlic, caraway seeds, tomato, and green pepper. Stir and cook for 5 minutes.
4. Simmer gently
Add broth or water until beef is just covered. Bring to a simmer, cover, and cook on low for 1 to 1.5 hours, until beef is tender.
5. Add vegetables
Add carrots, parsnip, and potatoes. Simmer uncovered until vegetables are soft and the broth has slightly thickened (about 30 more minutes).
6. Season & serve
Taste and adjust with salt and pepper. Serve hot with rustic bread or csipetke (Hungarian pinched noodles).
