Meat Stuffed Cabbage:
Ingredients:
- 2 Lbs ground beef
- 1/2 cup small grain rice
- 1 small can tomato paste
- salt and pepper to taste
- 4 pieces of fresh Thyme
- juice from 1 lemon
- 3 garlic cloves, minced
- 1 large onion, chopped and sautéed
- 1/2 red bell pepper, chopped
- 2 tbsp paprika
- 1 tbsp all seasoning
- 1 large cabbage
- 1/4 cup breadcrumbs
- 1 handful of fresh parsley, chopped

Procedure:
Start by boiling the cabbage leaves in abundance water for about 5-10 min, remove and put in ice water. Save the liquid for later.
In a large bowl convine the meat with all the spices, rice, onion, parsley, pepper, thyme, 1 tbsp of tomato paste and breadcrumbs, mix well and make meatballs.
For the sauce, mix 3 cups of the liquid from the boiled cabbage with the tomato paste and lemon juice.
Place in the bottom
Of a pan some leftover cabbage leaves.
Start filling the cabbage leaves with the meat and roll up very tightly. Place them
On the pot. Add the sauce all over, cover and cook on the stove in low temp for 30-40 min.
Serve with rice.
