Coconut lime chicken
Ingredients:
* 3 large boneless skinless chicken breasts
* Lemon pepper seasoning
* 1 teaspoon garlic powder
* 1/4 cup olive oil for sautee Sauce
* ½ cup dry white wine
* 4 cloves garlic, minced
* 1 cup chicken broth
* 1 can coconut cream
* 2 tbsp garam masala spice
* 1 teaspoon turmeric powder
* juice from 1 lime freshly squeezed
* 2 Tablespoons cold hearth balance parve butter
* 2 tsp cornstarch
* Pinch of salt
* 1/4 cup fresh parsley, roughly chopped for garnish
INSTRUCTIONS
* Slice the chicken in half to create 2 thinner slices.
* Season with lemon pepper seasoning and garlic powder, You may also season with salt if desired.
* Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 4-5 minutes per side, until a golden crust has developed. Set aside and leave brown remnants in the pan.
Prepare the Sauce:
* In a bowl mix the cornstarch with the wine, chicken broth and coconut cream and lime juice, add the spices and a pinch of salt, in the skillet heat the parve butter and add the garlic, Immediately add the previous mixture and cook until is creamy.
* Add the chicken and cover, Reduce heat to low, cook for 7 min
* Serve with jasmin rice and garnish with parsley.
Accompanied with lime slices.
