Braised Chuckeye Roast
Ingredients:
- 5-6 lbs Grass fed Chuckeye roast
- 1 carrot peeled and cut in pieces
- 1 large onion chopped
- 3 diced garlic cloves
- 1/2 cup zucchini cut in pieces
- 1/2 cup celery cut in pieces
- half of a red bell pepper cut as you like
- 1/2 cup non sweet wine
- 1/4 cup broth
- salt and pepper to taste
- 1/6 cup soy sauce
- rosemary
- olive oil
- vegan butter

Instructions:
Start by cutting the meat into medium pieces, season with salt and pepper, and braise it in a saute pan at medium-high fire with olive oil, cook for a few minutes, like making a steak
When it looks browned and crispy remove from the pan, add the butter and veggies, salt and pepper, and sautee until veggies are tender, incorporate the wine, broth, and soy sauce, and let it simmer for a few minutes, transfer to a baking dish, add the meat on top, garnish with rosemary, cover with foil and cook in the oven at 350 F for 2 1/2 hours, remove the foil and cook 30 more minutes.
Serve with mash potatoes.
