Argentinian meat Empanadas
-1 lb ground beef
-1 large onion, chopped
-1 red bell pepper, chopped
-3 garlic cloves, chopped
-2 boiled eggs, shredded
-2 tbsp paprika
-2 tbsp salt
1 tbsp cumin
1 tsp black pepper
1/2 cup pitted green olives, chopped
Sautee the vegetables with oil in a large pot, add the meat and seasoning. cook for 20 min. Add the olives and egg.
Chill the filling in the fridge for and hour.
Prepare the empanada dough, fill each one with a large tbsp of filling and seal it.
if you are feeling confident, go ahead and shape it with the ''repulgue''. if not, just seal it very well.
Preheat oven at 400F.
Brush each one with egg wash and bake until the are a little browned.
