Charcuterie Cajun Bresaola

The Cajun Bresaola is made of a whole muscle of beef, carefully cured in a mixture of salt and sugar. Then heavily seasoned with our Cajun Seasoning to give it it's bold Cajun flavor. We then hang it to dry until it reaches its ideal texture.
