How to Finish Cooking Smoked Pastrami Brisket for a Tender Result

Option 1: Oven Method 

  1. Preheat oven to 275°F (135°C).

  2. Place the pastrami in a roasting pan.

  3. Add ½–1 cup of water or beef stock to the bottom of the pan.

  4. Cover tightly with aluminum foil.

  5. Cook until the internal temperature reaches 195–203°F (90–95°C).

Approximate cooking times:

  • 2–3 lb piece: 2–3 hours

  • 4–6 lb piece: 3–5 hours

  1. Remove from the oven and let rest for 20–30 minutes before slicing.

Tip: Slice against the grain for maximum tenderness.


Option 2: Traditional Steam Method

  1. Bring water to a gentle simmer in a large pot or steamer.

  2. Place the pastrami on a rack above the water, making sure it does not touch the water.

  3. Cover tightly with a lid.

  4. Steam until heated through and fork-tender.

Approximate steaming times:

  • Small pieces: 2–3 hours

  • Large pieces: 3–5 hours
