Meat-Stuffed Potatoes

A comforting, flavorful dish made with thinly sliced potatoes and seasoned ground beef, baked slowly in a savory tomato sauce. You can make it with yellow potatoes, sweet potatoes, or a mix of both.

Oven: 350°F

Ingredients

For the stuffed potatoes

  • 4–5 yellow potatoes, peeled and thinly sliced
  • Or 4 sweet potatoes, thinly sliced
  • Or use a mix of both :)
  • 1 lb ground beef
  • ½ bunch cilantro
  • 1 onion
  • 1 small potato
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • 1 tsp Pereg Kooba Spice
  • 1 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

For the sauce

  • 8 oz tomato sauce
  • 1 tbsp date syrup
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • ½ cup boiling water

Instructions

1. Prepare the meat filling
Add the onion, cilantro, and one small potato to a mini chopper and purée until finely blended.

Transfer to a bowl and add the ground beef, cumin, sweet paprika, Kooba spice, garlic powder, salt, and pepper. Mix until everything is well combined.

2. Stuff the potatoes
Take a small palmful of the meat mixture and sandwich it between two slices of potato.

Arrange the stuffed potatoes in a baking dish, keeping them in a single layer so they cook evenly.

3. Make the sauce
Combine the tomato sauce, date syrup, cumin, sweet paprika, garlic powder, and boiling water. Mix well.

Pour the sauce evenly over the stuffed potatoes.

4. Bake
Cover the baking dish and bake at 350°F for approximately 90 minutes, or until the potatoes are completely tender and the meat is cooked through.

Oshrat’s Tip

Try using half yellow potatoes and half sweet potatoes. The combination of savory beef, tomato sauce, and the natural sweetness of the sweet potatoes is delicious.
