Maude (Sephardic cholent)

There’s Nothing better than entering a jewish home every Friday and the entire place is filled with cholent aroma.

This time we prepare Maude, a delicious sephardic version of cholent.

You will need:

4 Lbs Flanken cut in pieces

12 large potatoes

4 tbsp Baharrat spice

1/4 cup oil

3 tbsp Salt

Cut potatoes in pieces, convine with oil and 1 tbsp salt, cook at 400F for about 30 minutes or until crispy.

In a large pot, fill the bottom with a layer of baked potatoes, then add half of the meat, 1 tbsp of salt and 2 tbsp of baharat, repeat this step again. Fill the pot with water until you reach the top. Cover and cook for 3 hrs in medium heat. Later move it to a shabbat plate and let it finish to cook until next day.
