Ratatouille chicken recipe
Try this Ratatuille baked chicken recipe for Passover:
BUY ORGANIC CHICKEN
-1 Lbs organic chicken from @koshercarnicery
-1 eggplant in slices
-1 zucchini in slices
-2 tomatoes thinly sliced
-1 large can of tomato sauce
-handful of fresh basil
-1 tbsp oregano
-1/2 tsp black pepper
-2 tsp salt
-1 onion, chopped
-4 garlic cloves, minced
-1 red bell pepper, chopped
-olive oil
Heat a pan with olive oil and brown the chicken for a few minutes. Remove and add the onion, red bell pepper and garlic, add salt and pepper, add the tomato sauce, season with basil and oregano, and cook for a few minutes. Put half of the sauce in a tray, place the eggplant, zucchini and tomatoes slices al over the edge, put the chicken in the middle and cover with remaining sauce. Drizzle some olive oil and and sprinkle more salt.
Preheat oven at 350•
Cover with foil and cook for 40 min.
Uncover and another 20 minutes.
