Preheat oven at 500F•.
Place the lamb in a baking tray.
Prepare an herbal pesto using:
-handful of fresh cilantro
-handful of fresh parsley
-1 tbsp oregano
-1 handful of fresh mint
-garlic cloves (3-4)
-1/4 cup olive oil
-1 tbsp salt
-1 tsp black pepper
-1 tsp coriander
-a few bay leaves
Grind everything and pour over the whole lamb.
Bake for 20 min, turn around the lamb and cook for another 20 min.
Remove from the oven and serve.
